Which units should I select when the chance comes?

Depends on level and what you want to kill most. Pick ones you hate most. Also it affects rain of arrows talents, so if you are going to use it, you can choose ones who are usually split into most stacks.
You can change your favoured enemy anytime you wish. |

Hunts, raids and monster mercenary quests are automatically favoured.
In all other battles you can have one creature favoured per every faction except elf. You can change it anytime in castle. |
