This subject would more appropriately placed in the Queries and Help Forum. It's not really an idea or suggestion.
Lets see -
No talent available that adds defense for a Combat Level 5 Knight.
+1 Def for lvl 1
+4 Def for taking Def parameter each lvl above 1.
+2 Chain Helm
+1 Weapon (Unholy Blackshard, Reprisal Sword or Sword of Retribution)
+3 Hauberk
+3 Defender Shield
+3 Temptress Boots (must be female, otherwise +2 from Galoshes of Battle)
+6 Labourers Guild 12 (Highly unlikely, but it fits the question)
+5 Mercenary Guild 10 (Probably impossible. It is inconceivable that someone could achieve such a high MG level and still be Combat Level 5)
+1 UCI (Costs 500 Diamonds, so good luck with that)
So an absolute maximum of +29. Some of that is very unlikely/impossible. More likely to have no more than +3 from LG and maybe +1 from MG (possibly +2?). Very few have UCI, certainly nobody as low as Combat Level 5 as far as I am aware.
This doesn;t include the inherent Defense of creatures and the Def granted by Racial Skill.

According to grunge, in theory, with gloves, its 31+racial bonuses.
Since this all is really just a theoretical number. QATC.
