Then how come Enchanted gargoyles take full fire elemental damage from Hellfire? (the same as any other unit that doesn't have elemental fire immunity)

Since enchanted garg is immune to fire so dmg done by hell fire in EC will be 0

They actually take less than full fire damage.
So it seems they take the normal physical damage from the attack plus some damage from hellfire, probably due to "Ignore Magic Resistance". |
Nope, so I thought as well, but check my first message: Enchanted gargoyles take full fire elemental damage from Hellfire?(the same as any other unit that doesn't have elemental fire immunity)
In the combat whose link I've given above, you'll see that both the Enchanted gargoyles and genies and all other unit from my army take exactly the same fire elemental damage: 133. |

That 133 damage is not the actual damage received by the attack but the indicator Hellfire occurred and the base damage by it. The actual damage is shown at next line, for example:
Succubi deal 133 extra damage with Hellfire.
Succubi deal 67 damage to Enchanted gargoyles. 4 perish.
Hellfire occurred, base hellfire damage is 133, actual damage dealt to gargs is 67 (the sum of the physical damage from the attack and the hellfire one).
I hope it's made clearer.
Same thing applies for example with dwarf caravan. When Patriarchs cast Fire Wall, on might dwarf caravan damage on gargs is 0. But when it's the elemental build dwarf caravan gargs take damage (has happened to me many times). |
