Can somebody defend in Survilurgs, and at the same time control the army of somebody else, in the same, or a different battle?

Yes; if someone in the defense passes control to you (must be in friend's list, and be lower CL than you).
If you win your defense, and there's still open spots when you're done, you can join again.
