I'm playing a campaign at lowest (pawn) setting. My Wizard is having trouble dealing with some of the battles, retrying up to 5 times to win. I'm about 60% done and just found an all dragon fight and I'm ready to quit.

Is is worth the huge arts expense trying to complete?

Adventurer's guild is designed to be a gold sink so it's only worth doing if you really want the additional parameters or you enjoy it. That's for you to decide.

Regarding the dragon fight - go as a might wizard. It will be much easier to win. Chaos build is a bad choice for most campaign battles.
