1. Weapon enchant: Fire 12%, water 12%
Base damage 100 (melee)
Now this will deal 100+24% right? (thinking that the opponent has no shield on magic or anything)
2. Armor enchant: Fire 12%, water 12%
Base damage from opponent 100 (melee)
Now will this enchant protect us from 24% of damage from the opponent? (thinking the opponent has no magic pierce or anything)
3. Jewel Enchant: Air magic spell damage bonus 2%, ignore earth shield 3%
Will this deal only extra damage if a spell is cast?
and what ignore shield 3%? will this be applicable for both melee and spells? | Patri goes some way to answer your questions here

3. Jewel enchants only affect spells, not melee / ranged damage. Hence why in wars classic elf doesnt need to take jewel enchants for damage | 1. Yeah each would provide 12 extra damage
2. Yes it would provide for example 24% cover from fireball spell and 2.4% cover from fire enchants on a weapon with f12 armour
3. Yes jewels are only for spells and the second part is to remove some of the magic shield from your opponent, such as remove 3% of the magic shield of a troop, useful against monster quests, immune troops and fully enchanted battles | for merlin36:
That answers a lot,
