If you want to be in the thieves guild, you should join when you feel you are ready. If you join now at Level 7, you will mostly be fighting Level 7 players and computer opponents during Ambushes.
If you wait till Level 8, you will be fighting Level 8 opponents instead. As the level increases, so do the strength of the players and the computer opponents as it is assumed you will be fully decked out with artifacts.
You lost to the barb due to the fact he had 12 attack and 10 defence? Then boost your attack and defence score with artifacts and such. 12 attack and 10 defence is normal at Level 7, especially during an ambush. I've seen Barbs with 20+ attack (but low defence) at Level 7, you must be prepared for these.
DE is one of the Strongest in Ambushes in my opinion due to Shrews going first and taking out the defences of an unprepared ambushee.
