This was one of the easter eggs that were introduced as part of the Grand Update 1. Simply a fun little thing that happens randomly in battle. Rogues, Shrews or Termagants can have rainbow hair instead of their normal colour.
Other easter eggs from the 1st Grand Update include Zombies that have a chance to lose their head in battle, so you fight zombies that are headless and Hobgoblins that wield different weapons. |

I also see one before.
In the, one stack is normal but the other stack have different color.
I just don't remember the battle log.
