As for how many of them you can count them by clicking on each type.
Let me try to count:
Invaders (27) + Brigands (27) + Monster (229) + Raid (229) + Vanguard (27) + Army (34) + Conspirators (30) = 603 different mercenary quests |

In this instance, what happen if someone at my level and faction score better in the mercenaries guild. Does my achievement disappear as in the case of the hunter achievements?
